How to create a Wafer Paper Confetti Texture for your cakes

Recently I received a parcel which was filled with pretty paper confetti discs. As soon as I saw them I knew I wanted to make an edible version to decorate a cake. In this weeks cake decorating tutorial I’m showing you how to use wafer paper to create the perfect edible confetti and the best bit is it really makes the cake simmer and shine!

The Wafer Paper

For the edible discs I used wafer paper. In the UK wafer paper is also known as rice paper. It comes in white sheets which can be easily cut down to use for cake decorations. For this cake I used 7x A5 sheets of wafer paper, using a circle punch to cut out 1 inch discs, this gave me enough to cover my 5 inch cake.

Wafer paper can be coloured in any colour, but you always want to use a dust colour, like a lustre dust or edible tint. If wafer paper gets wet it gets extremely sticky and starts to dissolve. For this cake I used the ‘hot pink‘ and ‘fairy floss pink‘ lustre dusts by SweetSticks (use my code ‘cakesbylynz’ to get 10% off on the Sweetstamp website). These are the prettiest pink colours and they are so pigmented, so they are great for colouring the wafer paper. In the video you’ll see I just use a small fluffy brush.

Applying the Wafer Paper

To apply the wafer paper on the cake I used edible glue. You can use water, but I found edible glue sticks a little quicker. There is no right or wrong way to attach the discs onto your cake, you just want to make sure they are going in different directions and don’t sit flat of the cake. This will enable them to catch the light and give a really pretty abstract effect.

I also used the 2 shades of pink and also some I kept white to create a really pretty pink ombre effect, but you can colour them in any colour to match your theme.

This was such a simple cake to create but I really love the effect. I think this would look so pretty as a single cake, or part of a tiered cake too. Also it’s a great alternative to fondant ruffles which add a lot of extra fondant onto a cake and take ages.
