How to Prepare and Cover a Cake with Icing / Fondant

For me one of the most important things when it comes to making cakes is making sure you have a well covered cake as a base to add your design. Now I usually refer to it as icing, but icing is exactly the same as fondant or sugarpaste, and I just love seeing icing covered cakes with smooth sides and that sharp edge along the top.

As this is my last video of 2017 I really wanted to share how I cover my cakes with you. In this video I go through step by step, from levelling my 6 inch vanilla cake, to covering it with a crumb coat of white chocolate ganache and finally covering it with some pretty pink icing. For this video I coloured the icing with a small amount of the Wilton rose pink to get this really pretty pink colour.

Getting smooth sides and sharp edges

When it comes to covering the cake with icing the most important thing is to get a smooth coating of ganache or buttercream on the outside of your cake before you add the icing / fondant. This makes it alot easier to get smooth edges and requires less smoothing. Some people have different methods of covering their cakes with buttercream or ganache but this is the way I have always done it and it has worked for me. When covering my cakes I then use both the solid plastic smoothers which help keeps the sides and top level, and then finish off around the edge with my Squires Kitchen flexi smoothers. These are amazing for creating that sharp edge and really allow you to work the icing beneath your fingers.
