Who doesn’t love a little sparkle! Let me show you how to add the prettiest edible glitter onto your cakes to really make them shimmer and shine.
A few years ago I created a tutorial where I used some pink edible glitter squares to cover a cake. This tutorial was so popular, but since making it the edible glitter is now no longer available. So I’ve been on the hunt to find an alternative and I have found it!

Recently I attended Cake International and as soon as I saw someone demoing the PME Magic Sparkles I knew I had found what I was looking for. I can’t tell you how sparkly this looked.
PME Magic Sparkles come in so many different colours, it really was so hard to choose. I went for Head in the Clouds; an iridescent lilac / purple. The pictures really don’t do it justice, just how sparkly it is.

How to make your cake sparkle
For this tutorial I’m adding the glitter to a 4 inch fondant covered dummy cake. Fondant is a great base for the edible glitter as it sticks so well when using edible glue.
Rather than using white fondant I coloured my fondant in a light lilac colour to match the glitter. This added a base colour to the cake, so if there were any gaps between the glitter it still had that lilac tone.

For applying the glitter I placed it into a bowl and used a large fluffy brush to pick up the little pieces. This is perfect as you are able to pick up quite a lot of glitter at once and it stays in those bristles until you push it onto your cake.

I used edible glue to make the glitter stick to the fondant. You could also use piping gel. You want something tacky, but not wet as you don’t want the glitter to dissolve.

I worked in panels so the edible glue didn’t have time to dry, and pushed the glitter onto the glue with the large fluffy brush. Any glitter than falls onto the board can be picked up with the brush, so none goes to waste.
How much do you need?
The PME Magic Sparkles come in 3g bottles. For this 4 inch cake I used 1 and a half bottles, which surprised me as I thought it would require more. If you were making a 5 inch cake I think 2 would be enough, but for larger cakes you would definitely need a few more bottles.
For this cake I covered the whole of the outside, but if you were using it just to sprinkle on the top of your cake, or maybe for the top of cupcakes one bottle would go quite far.
